What you need:
4 cups Rolled oats (not instant)
1 1/2 cups craisins, raisins, or other dried fruit (craisins pictured)
1 cup chopped walnuts, almonds, and/or seeds (walnuts pictured)
1/2 cup local honey
1/4 vegetable oil
1 teaspoon ground cinnamon
1/4 teaspoon salt
3 tablespoons brown sugar
1 teaspoon vanilla extract (optional)
How to:
1. Preheat your oven to 300 degrees F.
2. In a large bowl, mix all dry ingredients together. In a small bowl, mix all liquid ingredients together. Pour over the dry ingredients and mix thoroughly. Using your hands is the easiest.
3. On a baking sheet, spread the mixture in a thin layer. Pop that in the oven and after 15 minutes, stir around as best you can. Bake for another 5-15 minutes until a light golden color.
4. Take it out of the oven and allow it to cool (20 minutes). If you allow it to sit, you can cut it into bars or clusters. If you prefer smaller pieces, then stir after you take it out of the oven. Store in an airtight container (I prefer cool looking mason jars).
Voila!
Now this is by far one of my favorite things to make because it’s completely customizable and it’s perfect for an on-the-go breakfast treat when you’re running out the door. Make them in small or large batches, depending on how much you plan on eating or sharing. Add this to some yummy Greek yogurt and you have yourself a healthy breakfast!
