What you need:
2 ripe bananas
1 cup oats (quick or rolled)
1 teaspoon sugar
pinch of salt
1/4 teaspoon butter or margarine (optional)
sliced almonds (or walnuts)
craisins (or raisins)
1 tablespoon cinnamon
semi-sweet chocolate morsels (optional)
How to:
1. Preheat the oven to 350 degrees F.
2. In a large bowl, mash the bananas. Mix in the oats, sugar, cinnamon, and salt. Then mix in the craisins, almonds.
3. Spoon into balls on a baking sheet. For crunchier cookies, flatten slightly with the back of the spoon. For chewy on the inside cookies, leave as balls. Bake in the oven for 35-45 minutes. For even more of a crunch, flip once about 10 minutes before done.
Now you have healthy bite sized snacks! These are a healthy alternative for your whole family (and your friends if you’re willing to share). Eat them any time of day: breakfast, snack, or even dessert! This is going to be my new go to breakfast cookie and that is the truth!
I’m going to buy some green bananas because by the time I get home they will be ripe.
