What you need:
1 box whole wheat pasta of your choice, I used rotini
chicken, cooked and shredded
1/2 cup cherry tomatoes quartered
a bunch of kale
1/2 cup crumbled Feta
1/4 grated Parmesan cheese
salt and pepper to taste
Dressing:
4 tablespoons olive oil
2 tablespoons pesto
2 teaspoons balsamic or white wine vinegar
salt and pepper to taste
How to:
1. Cook the chicken (grill, oven, or saute) and season with salt and pepper. Cook the pasta by following the directions on the box. Cook the kale however you prefer until it has shrunk and turned a dark green color (about 5 minutes).
2. Once pasta is done, set aside in a large bowl to be mixed with everything. Once done, shred the chicken into small, but not too small, pieces and add to the pasta. Then add the kale, chopped cherry tomatoes, and toss everything with the dressing that you made. I also added a little white wine to the dressing to thin in out a little, but that’s optional. Add the Parmesan and Feta to the mix.
Dig in, or put it in the fridge to cool down! Lasts for the rest of the week and is great for lunches! Not to mention Kale is rich with nutrients and vitamins, so get your kale on!
